Our family comes from a state in Mexico called Guanajuato and this area is famous for its slow cooked pork called Carnitas. Carnitas Guanajuato Mexican Restaurant is a Mexican cuisine unlike any other. The word Carnitas actually means “little meats" but there is nothing little about the flavor. We start with the best cuts of pork. We use only the freshest shoulder cuts of prime meat. The pork is then slow roasted for a long time, sometimes the length of an entire day until the pork is fully cooked. Then the pork is shredded, or pulled and fried, which creates very crispy meat with a tender, taste like no other.
