In January 2004 Cesar Flores opened Zapata’s True Mexican Food, Restaurant & Cantina, complete with patio dining and rose to the challenge of presenting true, authentic Mexican food in a Suburban setting. From the freshly made slow roasted salsa to the Menudo (tripe soup) you will not see another menu like it in Columbia. Seviche (shrimp and fish cooked in lime juice) and Churros con Chocolate (a delicious dessert) are some of the traditional Mexican family recipes that are the backbone of this restaurant’s success.
